“B” is for Breast Cancer Awareness

We couldn’t let this month pass us by without showing support for breast cancer awareness month. In this segment of “Cookin‘ with Cortez Lee”, our host makes a healthy and delicious broccoli casserole – broccoli is a great cancer fighting food. Peep the ingredients, finished product and video below…

 

You will need:

Cookware: skillet, pot, 16” – 24”casserole dish or aluminum pan, chopping knife, spatula, fork, spoon, glass bowl, can opener, measuring cup/spoon, large mixing spoon

1 ½ to 2 lbs of boneless, skinless chicken breast
1 ½  cups of white rice
1 – 16oz pack of bacon or diced ham
2 eggs
1 teaspoon Salt
1 teaspoon pepper
1 packet of shredded cheddar cheese
2 small containers of cream cheese (or 1 large container)
1 medium can of mushroom soup
1 can of whole kernel corn
2 tablespoons of cooking oil
2 bags of frozen unseasoned broccoli pieces
Pepper Jack Cheez Its

Allow cream cheese to sit at room temperature for 15 minutes or until soft.

Place rice in a pot, cover rice with 1 inch of water (3 – 5 cups depending on the pot), add 2 tablespoons of cooking oil, 1 teaspoon of salt on medium –high heat.  Cover the pot with a lid but leave an opening for the steam to escape.  Let the water boil down until you see holes in the rice.  Stir rice with large spoon, add water until rice is barely covered then allow water to cook down again until the holes appear.  roughly 15 minutes.

Cook the entire pack of bacon in a skillet.  Be sure to save the grease by pouring it into a glass bowl.  Allow bacon to cool then chop into bits/pieces.

Pre-heat oven to 400 degrees

Rinse chicken breast; add bacon grease to skillet over medium heat. (if using ham instead of bacon, add 3 tablespoons of cooking oil).  Place all chicken breast into the skillet.  Cover the skillet with a lid but leave an opening for the steam to escape.  Cook chicken 7-9 minutes on each side.  Remove chicken from heat but allow it to remain in the skillet if possible.  Allow chicken to cool at your discretion then chop the chicken with a knife.

Whisk the 2 eggs in a large bowl then add salt and pepper.  Drain the can of corn, then mix all ingredients (not the shredded cheese, grease, or oil) into the eggs.

Mix thoroughly then transfer mixture to a casserole dish.  Place casserole dish in over for 15 minutes.

Crush 2 cups of Pepper Jack Cheez It in a sandwich bag.  Melt 3 tablespoons of butter (slice butter thinly for even melting in the microwave).  Place crushed Cheez Its in melted butter until all are evenly coated.

Remove casserole; top with shredded cheese and Cheez Its.  Return dish to oven for 5 minutes or until cheese is melted. Let dish stand for 10 minutes.  Serves  10 – 14 hearty appetites.
